DTWINE Talks – Chapter 1. Interview with Amparo Querol (IATA-CSIC) for integrating functional models in the production system
The DTWINE “strategic lines” research project aims to apply and consolidate the revolutionary technology of digital twins in the wine sector to achieve a more sustainable production and respond to new consumption trends of wines with lower alcohol content and aromatic profiles.
From artica+i, we act as the technical office of the project and contribute to its dissemination.
- Within this communicative objective, we present a series of 4 chapters where the protagonists of the project will respond, in interview format, to the main questions about the initiative, its phases, its challenges and its objectives.
The power of data to generate mathematical models to understand the metabolic flux of yeasts
Amparo Querol, scientific director of IATA-CSIC (Department of Food Biotechnology), shares her expert view on the subject in this first chapter. “With DTWINE we try to perform an online control applying the concept of digital twins that we have developed to integrate them into a production system. To carry them out, we have designed an experimental winery,” he noted.
