Interview with Antonio Aguirre, INCONEF, on the role of the experimental winery in the project.
Antonio Aguirre, engineer and founding partner of INCONEF (INSTALLATION AND CONTROL OF ENERGY AND FLUIDS), explains in this interview how the experimental winery of the DTWINE project works and the great advantages of this controlled environment when measuring densities capable of generating a useful model for a real winery.
In Antonio’s words, the role of INCONEF in the DTWINE project is “to set up all the sensory part of the experimental winery so that, later, data can be collected and worked on to make Artificial Intelligence and generate the model”.
An environment where multiple variables can be collected to generate a real mathematical model.
During the interview, we will learn more about why this experimental cellar is so innovative, allowing us to parameterize variables that are not usually measured at a high speed, taking approximately 5 samples every second of each one of them. These variables include, in addition to temperatures, densities, carbon dioxide flow or even dissolved oxygen.
All the extracted data will become part of a database that will be used to generate a digital model of everything that happened during fermentation. With these variables, in addition to others that will be introduced by hand (such as the type of grapes or yeast introduced into each tank, the energy consumption during fermentation, etc.), a real mathematical model will be generated that can be applied to active wineries.
