Acrónimo: ANPROCAF

Goal: The aim of the project is to design new fresh meat products, made from ingredients that partially replace animal fat with alternative fats of vegetable or marine origin, thus improving their content and profile of fatty acids and, therefore, improving their health properties.

The Instituto de Ciencia y Tecnología de Alimentos y Nutrición (ICTAN), belonging to the Superior Council of Scientific Research, collaborates with Emcesa and will provide technology that will contribute to obtain fresh meat products with healthier characteristics.

Goal:

“Oil structuring systems as a strategy to improve the content and profile of fatty acids in fresh products”.

ANPROCAF seeks to design new fresh meat products, made from new materials that replace animal fat with other alternative fats, to improve their health properties. It´s about using oils of vegetable or marine origin which, through technologies developed by the research center, will make it possible to obtain fat analogues that will replace animal fats, improving the fat profile of the new meat products in accordance with current health recommendations.
